Just enough for two, perfectly roasted beef tenderloin is served with succulent shrimp and rich, buttery Béarnaise. For a sweet ending to our scrumptious soiree, we'll prepare a creamy dreamy chocolate crème brulee with a crackly caramel crust.

SKILLS AND TECHNIQUES Candying nuts; making a vinaigrette; preparing gourmet grilled cheese sandwiches; grilling shrimp and testing for doneness; searing and roasting beef tenderloin; testing beef for doneness; resting and carving beef; making a classical emulsion sauce; preparing a decadent vegetable dish that will become a family favorite; caramelizing sugar with a blow torch.
